Food insecurity is when consistent access to adequate, nutritious food is limited by lack of money or other resources. Nearly 15 percent of US households were food insecure in 2011, up from 10.7 percent in 2001.
Food insecurity is a major problem in Minnesota. Hunger Solutions Minnesota reports that one in five Minnesota families face some degree of food insecurity. There were over than 3 million visits to food shelves in Minnesota in 2011. Access to healthy, affordable food is often particularly difficult in the summer when there are no assisted school meal programs.
As part of the UST Stewardship Science Program, we are organizing a Vegetable Drop-Off drive at UST to help in the fight against food insecurity. If you have a bit of extra produce from your garden, please consider bringing it to a drop off location at UST on Thursdays throughout the summer. We will have a drop off location near room 351 in Owens Science Hall (on the UST St. Paul South Campus) from 8am-4pm, and another at the UST Stewardship Garden (behind Brady Education Center) from 4-7pm (see the flyer for details about the program and directions to this site). All produce will be delivered to Neighbors Inc., a food shelf in South St. Paul. Neighbors could really use as many donations as possible, and fresh produce is especially needed. We hope that the UST community can work together to meet some of this need this summer and in the years to come.
